The Bar with terrines
Just off the farm, Stéphane’s cousin Xavier has a pig and sheep farm (EARL La Montagne). In addition to his farm, his wife wanted to create a unique place and she arrived there since recently a terrine bar was born!
The place is quite crazy: a beautiful space in the middle of nature, tastefully decorated with pallet furniture, replenishment materials, deckchairs, cushions, colors! Hardly arrived that neither of us wants to leave! We would have seen each other spending the afternoon on the deckchairs eating toast! But as much as the place has conquered us, what about the famous terrines ?
Well we are conquered there too. Real craftsman’s work, homemade terrines and taste!! We tasted a country terrine, a mirabelle and a veal. A menu at 14,50 € is proposed: terrine of your choice, fresh fries and vegetables to crunch, munster and camembert, ice cream from the farm or homemade dessert. Nothing to say!
The place is really great because one can come to many, even privatize it for a cousinade or a seminar for example.

Country of the Kirsch
Fougerolles orchards are approximately 40,000 cherry trees located in fields, meadows, gardens. Local varieties belong to the family of cherries, they are cultivated for the production of kirsch, jam, syrups, desserts and other food uses.
HARVEST CHERRY
Since the establishment of the orchard Fougerolles, circa 1700 manual harvesting was carried out with a foot and a goat charmotte. Today mechanical harvesting (80% yield) results in shaking the trees with a giant claw on the trunk. Cherries fall onto a carpet and will be stored in plastic drums. The harvest is early July.
LA FERMENTATION
Fermentation is the conversion of sugars into alcohol (ethanol). Ferments will come in action they are normally found in nature (yeast).
After the period of intense fermentation (anaerobic) in which a foam emerges drums, we move to the calmer phase of several weeks, can form a crust over the fruit mass.
When fermentation is complete, the barrels were sealed.
LA DISTILLATION

Kirsch Fougerolles obtained Wednesday, May 5, 2010 the AOC (Appellation
Controlled Origin). This is the first fruit brandy and labeled. Fougerolles and ten surrounding towns are concerned.
